Today's recipe of the day is... Barley and Chicken Salad!
So, since the past couple recipes were items that take a lot of time and dedication, I thought that today I would do a really simple recipe that is crazy yummy and really easy and healthy all at the same time!
Here is what you will need:
2/3 cup uncooked quick cooking barley
1 1/2 cups (about 6 ounces) coarsely chopped cooked boneless skinless chicken breast (cooked however you like it)
3/4 cup seedless red grapes, cut in half
2 tablespoons toasted chopped walnuts
2 tablespoons lemon juice
1 tablespoon orange juice
1 tablespoon extra virgin olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
3 tablespoons finely chopped Italian parsley
Directions:
1. Cook barley according to package directions. Transfer to bowl; cool until lukewarm.
*IMPORTANT* Omit any salts or fats the barley calls for in the instructions. We'll be adding salts and fats into the salad, so we don't need any more while cooking the barley.
2. Combine barley, chicken, grapes, and walnuts in a large bowl. Whisk together lemon juice, orange juice, oil, salt and pepper in a small bowl. Pour over salad, sprinkle with parsley, and toss gently.
So I had this for the first time for lunch today and it was amazing. So amazing and simple to make that I had to share it with you all. I really hope you enjoy it because not only is it tasty, it is healthy too!
