Today's Recipe of the day is.... Cinnamon Rolls!
For my first recipe post, I thought I would do something relatively simple anyone can make that is still super delicious. They're not very healthy though, so make sure to eat them in moderation or maybe share them with your friends! Okay, here's the recipe:
Mix the following ingredients together using the paddle of a standard Kitchen Aide Mixer:
1 Cup of warm water (105-115 deg. Fahrenheit)
2 Tablespoons oil
2 Tablespoons sugar
1 1/2 teaspoons yeast
*Let this mixture rest for 5 minutes or until you see a slight foam on top of the mixture.
*IMPORTANT* It is very important that the water is between 105-115 deg. Use a thermometer to check how warm it is. If it is colder or hotter than the stated temperature, you will kill the yeast and your dough will not rise.
After the yeast mixture has rested, add the following ingredients to it using the dough hook instead of the paddle:
1 teaspoon salt
1 Beaten egg
3 Cups of flour (more or less as needed)
The dough is done when all of it pulls away from the sides and bottom of the bowl when the mixer is turned on high.
Spread 1 Tablespoon of olive oil in a bowl and place the dough (rolled into a ball) in the bowl and coat with the oil. Cover bowl with plastic wrap and let sit on the counter or 2-3 hours or until the dough has doubled in size.
After the dough has risen, roll it out on a lightly floured surface into a 9"x12" rectangle. Spread the following onto the rectangle:
2 Tablespoons melted margarine
1 Tablespoon cinnamon
2 Tablespoons sugar
2 Tablespoons brown sugar
*Mix the sugars and cinnamon together before spreading it onto the dough. :)
Roll the dough up into a log and cut into 1 inch rolls and place in a greased 9"x13" glass baking dish. Cover with plastic wrap and let it sit on the counter for another 1.5-2 hours or until the rolls have doubled in size.
*TIP* If you use a piece of thread to slip under the dough log and pull the thread up through the dough, you won't squish the dough when you cut it and you will have close to perfect circles! :)
Once the rolls have risen, remove the plastic wrap and place them in a 375 deg oven and bake for 20 minutes.
*This glaze is optional! It's delicious though, so I highly recommend using it on top of your cinnamon rolls!*
Mix the following ingredients together until desired consistency and spread on top of cinnamon rolls:
2 Tablespoons melted margarine
1 Cup powdered sugar
1/2 teaspoon vanilla extract
1 1/2 teaspoons of HOT water (add more as need to thin if desired)
These cinnamon rolls are delicious! I make them all the time for family and friends and they never last more than a day in my household! There is a lot of prep time involved but if you're looking to splurge once and a while, these are a great treat! Enjoy! :)
